This is an excellent fresh, aromatic and fruity white wine, gentle on the palate, with balanced sugar / acidic ratio typical of the Sauvignon Blanc

Vine variety: 100% Sauvignon blanc

Soil: Clay mixed with crushed limestone

Harvest: in the second ten days of September

Yield per hectare: 7 tons of grapes equal to 45 hectoliters of wine

Wine-making process: Gentle pressing of grapes and later fermentation in absebce of skin at a controlled temperature

Evolution/Ageing: in stainless steel vats

Technical features: Alcohol 12,5% by volume

Tasting temperature: 8-12 degrees centigrade

Best served with: a combination of raw fish appetizers (oysters, mussels, shrimp), hot fish appetizers (octopus, soup with mussels, etc), other fish (squid, cuttlefish etc), fried fish, shellfish, fish soups, white meat, lean grilled pork, vegetables (eggplant and peppers), and rice mixed with vegetables and fish
