Novembre IGT Bianco di Toscana Late Harvest
Category: Medium-full bodied
Otherwise known as a "meditation" wine, this is the ideal wine one would sip on between meals or after dinner. Its fruity aroma of white and yellow blend in gracefully with a light vanilla spice and fine notes of mushrooms and undergrowth. May also be served with medium-hard or refermented cheeses.
The principles underlining the rationale upon which this unique wine is obtained are:
1.Use of autochthonous vines and respect of local soil.
2.Use of partially ditched grapes with a slight botrytis.
3.Use of ancient techniques, similar to the ones utilized to obtain the Hungarian Tokaji or the French Souterns. Such a tecnique guarantees the lingering of the wine's aroma as well as special scents released by the vines and the noble mould (botrytis).
Vine variety: 50% Tuscan Trebbiano, 50% White Chianti Malvasia
Soil: Fairly fertile, rich in calcium and organic components, very permeable
Harvest: Beginning of November
Wine Making Process: at room temperature through partial maceration of the skins for 24 hours. Subsequent separation of the must from the marcs, followed by alcoholic fermentation of 20 days typically in French oak barriques (90%) or occasionally in Hungarian barriques (10%).
Evolution/Ageing: in French (90%) or Hungarian (10%) oak barriques for 14 months.
Technical features:Alcohol 14,00% Vol., Volatile acidity 0,43 g/l, residual sugars 100 g/l
Tasting temperature: 14 degrees centigrade
Best served with: Optimal with cheese like "taleggio", sweets with cream and pastries
