Chianti Classico Riserva DOCG
'Chianti Classico Riserva' distinguishes the Chianti wine aged for at least 3 years following harvest. The Stefano Farina vineyard clearly respects this rule by using a severe selection process, whereby only the wine believed to be of superior quality can be elected to a "Riserva". This is why the number of bottles produced is very flexible depending on the harvested yield. Aromatically notes of red fruits like cherries and berries blended with notes of spice and leather. on the palate, tannins, softness and persistence are the features that highlight the great quality.
Vine variety: 100% Sangiovese
Soil: calcareous and poor, basically marl and lime and very permeable
Harvest: by hand with baskets of 20 Kilograms in the second half of October
Yield per hectare: from 6 to 6.5 tons of grapes equal to 40/45 hectoliters of wine.
Wine making process: Alcoholic and malolactic fermentation conducted with innovative techniques and carried out at a controlled temperature
Evolution/Ageing: 6 months in cement vats, 16 months in the oak (part in oak casks of Slavonic origin, part in barriques of second and third passage). Ageing in bottles for 6 months before selling.
Technical features: alcohol 13,5% by volume.
Tasting temperature: 18-20 degrees centigrade
Best served with: red meats, game, roasted and grilled meats (T-bone steak)
