BRASATO WITH BAROLO - Recipe

BRASATO WITH BAROLO

 Ingredients (6/8 people)     

- 1 pund of meat 

- 1 bottles of Barolo 
 
- 1/2 cup Cognac 
 
- 2 onions 
 
- 2 carrots 
 
- 1/2 celery 
 
- 2 cloves of garlic 
- 3/4 cloves
 
- 1 piece of cinnamon
- a few juniper berries
- a few peppercorns
- a small bunch of herbs: bay.leaf, sage, resemary, thyme
- Extra vergin olive oil
- Butter
- A pinch of salt
- Salt to taste
 
1) In a pn, put the meat in earthenware
2) Cut into large pieces the onions, carrots and celery and spread them on the meat
3) Add the herbs, cloves, cinnamon, juniper berries, peppercorns, a pinch of salt
4) Finally sprinkle all with Barolo wine
5) Marinate the meat in the wine for at least half a day, placing the container in a cool place or in the refrigerator
6) Then drain the vegetables, cut them smaller and brown them in a large pan with extra verin olive oil, butter and perfumes
7) Drain the meat, dry and fry over high heat
